I admit, I am a creature of habit & routines. I have this smoothie almost every day for my breakfast/lunch.
I always recommend using organic items when possible.
1 cup plant-based milk of choice
1 cup coconut milk
2 Tablespoons almond butter
1 handful spinach
1/2 cup frozen blueberries
1 Tablespoon vanilla flavor protein powder
Optional: 2 Tablespoons Chia seeds
Place all ingredients in a blender/smoothie maker and blend until mixed. Add more milk or berries to reach desired thickness. If you added Chia seeds, allow to rest for 5 minutes before consuming.

My Story
I grew up in the Pacific Northwest, in a typical, nothing exciting, family; the youngest of four kids. I was a healthy child, but weird things started happening my senior year of High School. I started noticing one quirky thing: I would get headaches when I was having a great time with friends, laughing it up. You know the kind of laughs where you laugh so hard you can hardly breathe. But during those times, when I felt fine and happy, BAM! A killer headache in the back of my head would hit me. I ignored it. I didn’t even think about what it could mean, that it could be more than just a headache.
I just kept silent, didn’t tell a soul, and lived my life, ignoring the headaches the best I could.
Fast forward, uh…more years than I care to admit, and I still do the same thing:
Ignore the headaches and pain and live my life.
But now I know what it is.
Turns out, I have Chiari Malformation: A condition where the back of the skull didn’t form properly and causes the cerebellum tonsils of the brain to move down into the spinal cord because there is not enough room in the skull. In other words, my brain is too big for my skull.
Who knew that could happen?
In the beginning of 2003, I was happily married with a beautiful two-year-old daughter. This was the year Chiari would make my eyes go crazy (Nystagmus), my headaches worsen, and new and not-so-fun symptoms popped up, giving me no choice but to seek medical help. On August 22, 2003, I had brain surgery. After a tough recovery, with some complications, I had most of my life back. Surgery doesn’t cure Chiari; it only manages it at best. But my life goes on happily with minor issues. I was even able to have another beautiful girl in 2005.
And then I gained weight. And then some more. And it was easy to blame Chiari as an excuse to not have a healthy lifestyle. After all, if I can’t even lay flat, bend over without dizziness, or tilt my head up, how can I exercise? Add in headaches, dizziness, weird head tingling, neck issues, and forget it. As an all or nothing kind of gal, if I couldn’t exercise and was forced to take rest days, then what was the point of doing anything at all?
My ignorance about a healthy lifestyle was real.
Until one November day, 2021, I got tired of being seventy pounds overweight. I got tired of the heaviness of my body. I found a healthy lifestyle that I could follow, and it changed my life! I stopped the excuses, made health my hobby, and became so excited about a healthy lifestyle that I jumped all in and drove my family crazy! I lost all seventy pounds, felt a million times better, and as a bonus surprise, my Chiari symptoms improved.
Even with a malformation illness, I have a lot of control over my health.
It is with that same passion that I love to share what I have learned about nutrition and wellness. As a current student at Institute for Intergrated Nutrition (IIN), I am continuing to learn even more.
It is my passion to educate others that a healthy lifestyle is achievable, given the right tools.
